Sweet and Sour Spinach Salad

For those of us who are “iron challenged” (read, anemic), finding interesting and fun foods to increase our red blood cell production is challenging. If you have a sweet tooth like me, it’s even worse. Foods high in iron are so, well, bland! I’ve been experimenting and finding new ways to make myself healthier while enjoying my meals. Here’s a spinach-based salad:

1 1/2 c. fresh washed spinach

1 baby dill pickle sliced

1 slice American or cheddar cheese

4 grapes, halved

2 tablespoons raspberry vingarette

Mix it all together and enjoy. I eat this with a walnut raspberry vingarette, so mixing some nuts in this might be extra yummy.

Now, a question: Vitamin C helps the body metabolize iron. Anyone got any good vitamin C enhanced recipes to go with this salad? Comment below!
